Enjoy the upper whitewater section, then pause for a delicious gourmet meal served riverside at Mad River’s private and boat access only dinner site perched on the river’s edge overlooking the two largest rapids in the canyon. Dinner is prepared by a professional chef and served at approximately 5:30pm. Chef Ty’s low country cuisine is something between a back-yard BBQ and a high end riverside buffet. Chef prepares a fresh, from scratch and ever-changing menu right on the river! Chef Ty has over 18 years of professional culinary experience in world class restaurants and is excited to be on the river cooking outdoors. The cuisine hails from the Low Country of Charleston, S.C., where Ty studied his craft. Our Chef brings a bit of the South to the Mountain West and the Snake River using fresh local ingredients. The menu changes from week to week and variations of a starter, bread, salad, veggies, a side, fish, beef and dessert are served. Menu items may include cheddar chive biscuits, house jerky, grilled broccolini and cheddar mornay, honey glazed heirloom carrots, balsamic grilled asparagus, curry crusted Utah steelhead trout, grilled bavette steak with horseradish cream and dutch oven mixed berry cobbler.
