French Brioche and Pain Perdu (French Toast)


King cake is a type of cake associated in a number of countries with the festival of Epiphany at the end of the Christmas season; in other places, it is associated with the pre-Lent celebrations of Mardi Gras/Carnival. The preparation of this delectable French pastry includes a folding technique, light custard and almond cream, and baking! You will participate in each of these steps, learn the theory of the puff pastry, and make your own “Galette des Rois!” Each student will take home their own king cake and will have the pleasure of finding a hidden surprise inside!Chef Simon Herfray is a French pastry chef and the owner of Atelier Sucre. He graduated in 2006 with a Masters Degree in Pastry and Bakery in Vendée, France. He then worked in London, UK, and Brisbane, Australia, for world-class restaurants. In 2009, Chef Simon Herfray entered New York Citys pastry scene as the new Executive Pastry Chef of Falai LLC. He then moved on to Café M, a cozy pastry and coffee shop by the Empire State Building in Manhattan. Soon after he crossed the bridge to Downtown Brooklyn and continued to create unique and delicious desserts at sister restaurants, Bacchus and La Defense Bakery and Bistro.
